Abstract
概况食品辐射加工(或称辐射保藏食品)是用γ射线或高能电子射线辐照食品,以延长食品的保藏期,提高卫生安全性的方法。它是一种新的食品加工技术。世界各国对这种新技术的研究开发已有30年以上的历史,积累了很多研究成果,现正在逐渐向实用化阶段过渡。辐射保藏食品是对付世界人口急增,防止食物收获后损失的合理手段;亦是减少化学添加剂的使用,代替能耗大的冷冻等的物理保藏法,从长远来看意义重大。
